I can’t wait for another Holiday food swap!
For those that may not have seen my previous post, Food52.com is an amazing site filled with the best foodie finds and delicious recipes. This year I participated in their annual Food52 Holiday Food Swap.
To participate, you had to make a donation to No Kid Hungry and fill out a short survey about any food allergies and contact information. On December 1st I received an email with my “ swapee’s” information. Packages for your swapee had to be mailed by December 13th. Easy enough, right? Except when you end up with an illness that takes you and the kids down!
Your gift could contain anything from homemade goods to items from where you are from. I had such a hard time deciding what I wanted to do. In the end, I did a little bit from every idea I had. I thought about a breakfast box with different granolas, a hot chocolate box with homemade cocoas and marshmallows, salts and compound butters. I just couldn’t decide. Here is what I ended up doing…
Nutella Marshmallows from Paper & Stitch. These turned out amazing and they are super easy to make.
Lemon and Rosemary Marshmallows from A Beautiful Mess. I didn’t use food coloring in mine so they don’t look exactly the same, but what a combo! Lemon and rosemary are often used together, but then add the texture of a fresh marshmallow and it puts it over the top delicious!
Blueberry and Jasmine Tea Marshmallows from Bakers Royale. These were so much fun to make because of the different ingredients that I’ve never used before. Blueberry powder gives these marshmallows such a beautiful color and a subtle blueberry flavor. The kids and I didn’t dig the smell of the Jasmine tea in the blender, but the taste was fantastic. Definately worth trying!
Salted Maple Bourbon Marshmallows from The Spiced Life. I didn’t even get a picture of these because they didn’t last long. Enough said. Make them!
Rosemary Spiced Mixed Nuts from Kitchen Konfidence. These had a little bit of spice from the cayenne and rosemary and just enough sweet from maple syrup and brown sugar. Yum!
Balsamic Spiced Nuts from Food Fashion Party. These were amazing! I love anything with balsamic. I’d imagine these could be pretty darn tasty with flavored balsamic too!
Carrot Cake Granola from Gimme Some Oven. We did a double batch of this one. I think some of the spices need to be played with a little bit, but it was still good!
Winter Berry Granola from Always Order Dessert. Sooooo good! This was a huge hit in our house because of the berries and nuts. Definately easy to make and even easier to eat!
Cranberry Butter from Tasty Kitchen. We are saving this one for Christmas morning. If it tastes as good as it looks, we are in for an amazing treat!
And lastly, infused salts. The general rule of thumb is 1 teaspoon of the flavor you are infusing to 1/4 cup kosher salt. We did:
Espresso Salt which was 1 teaspoon of espresso powder mixed into 1/4 cup of kosher salt.
Dried porcini salt. For this one I had to grind dried porcini mushrooms in our mini food processor. Then same thing-mix 1 teaspoon of ground porcini into 1/4 cup of kosher salt.
Cabernet Salt. This one was a little more involved, but so worth it! You need 2 cups of Merlot or Cabernet in a heavy bottom pot. Reduce to 1 Tablespoon of liquid. This could take up to 15-20 minutes. Once it’s reduced, mix it with 1.5 cups of kosher salt. Spread out onto a parchment lined baking sheet and put in the oven with just the light on. This process will help the salt dry out and may take up to 2 days.
The finished product:
I added some “If you can read this bring me some wine” socks and off it went. I received a very heartfelt letter from the recipient stating how grateful and excited she was to receive such a thoughtful gift!
The leftovers were packaged up and gifted to loved ones. They don’t know it yet so, Surprise!
The blog will be quiet until after Christmas so I can fully enjoy the prep for our special day.
